CHRIS MAYO CORPORATE CHEF
As Corporate Chef, Chris oversees the kitchens of all Osio Culinary Group concepts. He is also Executive Chef at Local Bistro, Central Bistro and Kale & Clover. A vital member of the Osio Culinary Group, Chris is in charge of everything from development to day-to-day execution of the menus. When it comes to cooking, his guiding principle is simplicity, believing it is better to have three or four perfectly done elements on a plate than an ornate dish that muddles the ingredients’ flavor. Born in Boston and raised in Phoenix, Chris has worked in some of the world’s finest restaurants including Daniel, Savoy and Jean-Georges. Chris attended the French Culinary Institute in New York City.
BRITTANI WILLET DIRECTOR OF OPERATIONS
Brittani Willett, Director of Operations As Director of Operations, Brittani oversees the management of all Osio Culinary Group’s concepts: Local Bistro, Central Bistro, SumoMaya and Kale & Clover. Brittani’s journey to director of operations began in the kitchen. A graduate of Le Cordon Bleu in Pasadena, California, Brittani worked as a pastry chef in Dolce and as Sous Chef at Wildfish, both in Los Angeles, following a stage in Lago d’Iseo, Italy. After opening a location for Wildfish in Newport Beach, she came to the Valley as a trainer for the same concept. It was in Arizona that she began working in the front of the house as a manager for Metro Brasserie. She later became a General Manager at Kitchen 56. Brittani joined the OCG team as General Manager for Central Bistro. Because of her unparalleled logistical and organizational skills, she was made General Manager of Local Bistro as well, followed by Director of Operations two years later.
